This is way more of a summer post but it’s kind of perfect for kicking off some clean eating for the new year. I love the sweetness of the raisins in this savory recipe. It keeps well for 5 days or so but never actually lasts that long!
Simply combine the ingredients below:
- 1 c. quinoa cooked in 1+ c water or broth
- 1/3 c golden raisings
- bunch of scallion thinly sliced
- 2 tbsp. evoo
- 2 tbsp. lemon juice
- 2-4 garlic cloves finely chopped
- 2 c cherry tomatoes halved
- 1/4 c pistachios roughly chopped
- 3/4 c diced cucumber
- 1/2 c chopped parsley
- 1/4 c shopped mint
