Quinoa tabbouleh

This is way more of a summer post but it’s kind of perfect for kicking off some clean eating for the new year. I love the sweetness of the raisins in this savory recipe. It keeps well for 5 days or so but never actually lasts that long!image
Simply combine the ingredients below:

  • 1 c. quinoa cooked in 1+ c water or broth
  • 1/3 c golden raisings
  • bunch of scallion thinly sliced
  • 2 tbsp. evoo
  • 2 tbsp. lemon juice
  • 2-4 garlic cloves finely chopped
  • 2 c cherry tomatoes halved
  • 1/4 c pistachios roughly chopped
  • 3/4 c diced cucumber
  • 1/2 c chopped parsley
  • 1/4 c shopped mint
